Slow Cooker Taco Casserole

It’s hot I don’t want to turn on my oven.  My husband it to tired to grill because he spent all weekend fencing in our yard.  Slow cooker taco casserole it is.

You need:

3 flour tortillas

1 lb cook ground beef (with onion and green pepper if you like, we do)

1 small can of enchilada sauce

1 cup of shredded cheese

Slow Cooker Taco Casserole










Cut each tortilla into four triangles.Spray slow cooker with non stick spray and and arrange 3 triangles in cooker so the bottom is covered.  Mix ground beef and enchilada sauce in a bowl and spoon some over tortillas then add cheese.  Continue to layer and finish with cheese on top.  Cook on low for 3-4 hours.

I love to serve this with rice or it can be eaten alone.  Enjoy!
